Prof. Dr. Renan TUNALIOĞLU

Olive oil is a vegetable oil obtained by physical (pressing) method from the olive grain obtained from the olive tree. The presence of phenolic compounds (polyphenols) with antioxidant properties in this oil, which is obtained from a perennial fruit tree, is important in human health, especially in preventive health and in the treatment of cancer, heart, alzeimer etc. diseases. Phenolic compounds are compounds that contain a phenol group in their structure and can show antioxidant properties produced by olives as secondary metabolites. Polyphenols, especially in olive oil obtained from olive fruit, can be identified with the trainings given by expert tasters. In olive oil tasting, oleorepein, which passes from the olive grain to the oil (fruitiness-bitterness), and oleachantal in olive oil gives burning.

In this training, we aim to inform you about how you can distinguish the quality olive oil that you will use in your own meals at home, consume outdoors and even drink to protect your health. After the hours you will spare to be with us, your heart will be full of love for olives and olive oil.
